I knew I shouldn’t have eaten that…

I’ve been emptying my fridge in preparation for departing and eating those things which I knew I wouldn’t get in the Caribbean. I’d purchased a nice dry-aged T-Bone steak earlier in the week and dry-brined it for a couple of hours on Friday in preparation for sous-vide cooking. The dry brining looked good, but as I put it into the vacuum bag, I smelt something off. A whiff of rotten-meat smell that I ignored because I thought it might belong to the dry-aging process.

I was wrong.

I cooked the steak to rare and pan-seared it. I had baked a potato and made a nice peppercorn-mushroom-beef stock sauce, and it tasted great.

Food Poisoning sucks

I woke up in the middle of the night and felt pretty bad. After getting rid of the steak, I went back to very fitful sleep. In the morning, I still felt miserable, and my joints and muscles were quite painful. I made a coffee but only had a sip and decided that I needed to get back into bed rather than cleaning up my place in preparation for my upcoming trip.

The picture above shows I slept over 14 hours in total, it was actually closer to 16 hours. My walk to the grocery store and back usually takes 40 minutes, but this trip took me 1 1/2 hours because I was walking so slowly.  My usual resting heart rate is around 60BPM but on Saturday my heart rate never went below 100 all day!

Recuperation

Today I feel much better. My muscles don’t ache although I still have a bit of headache. But my pulse and blood pressure are back down to acceptable levels, and I think I’ve flushed out the toxins. I’ve even made good progress in cleaning up the place and packing my bag.  I might even take some solid food later, too 🙂
